Latest studies show a jackfruit meal can reverse diabetes. Here are some recipes.

Recent studies show that intake of unripe jack fruit can fight high blood sugar level and can regulate insulin and reduce the dependency. Once regarded as a peasant community food and sidelined because of misconceptions that it had heavy calories and high sugar level, the new results will definitely elevate Jackfruit as a healthy option. Here are some recipes by Chef Soju Phillip of Club Mahindra resorts Poovar Thiruvananthapuram

Chakka erisseri (Raw jackfruit cooked with pulses and coconut) Ingredients Unripe jack pods 500 gms Lobia 50 gms Coconut grated 1 cup +2 tbsp Cumin 1 tsp Turmeric 1/4 tsp Black pepper powder 1/4tsp Mustard seeds 1 tsp Coconut oil 2 tbsp Curry leaves 1 sprig Red chillies 2 Salt to taste

Method Soak lobia and cook with enough water till it done. Add sliced jack fruit, salt and cook well. Coarsely grind the coconut with cumin and turmeric and mix into the jack mixture, add pepper powder and cook on a low flame. Remove from fire and keep aside. Heat coconut oil in a pan, splutter mustard, curry leaves and red chilli, add the left over grated coconut and fry till golden brown. Remove and pour it over the erisseri and mix well. Serve with rice.

Raw jackfruit cutlet Ingredients: Unripe jack fruit- 500gms Boiled potato-1 no Chopped onions-50gms Chopped chilli-1tbsp Chopped curry leaf-1sprig Chopped ginger-1tsp Chopped garlic-1tsp Mustard seeds-1tsp Turmeric powder-1/4 tsp Chilli powder-1/2 tsp Garam masala powder-1/2tsp Salt- to taste Coconut oil-2 tbsp Bread cumbs-100 gms Flour-50 gms Oil for frying

Method Slice the jackfruit and boil it with a little salt and turmeric and cook till it done. Strain and keep aside. Heat coconut oil, splutter mustard, saute chopped onion, chilli, ginger and garlic. Add all the spices and after that add jack fruit along with mashed boiled potato. Add curry leaves and salt and saute well and mix till it combined. Remove from fire and cool. Shape into cutlet patties Mix flour with water. Dip the cutlet in this batter and roll in bread crumbs. Deep fry in hot oil till it done. Serve with chutney or ketchup

Chakka puzhukku (Unripe jack fruit cooked with coconut and spices) Ingredients: Jack fruit pods-500gms Grated coconut-1 cup Turmeric-1/4 tsp Green chilli-1no Garlic-1pod Coconut oil-2 tbsp Curry leaves-1 sprig Salt-to taste

Method Cook jackfruit pieces in little water with turmeric and salt. Coarsely grind the coconut, garlic, cumin and green chilli. Add this mixture to the cooked jackfruit and mix well and mash it slightly. Check the seasoning. Add the coconut oil and curry leaves into it and mix well and remove from the fire. Serve with fish curry or fresh coconut oil.
