Idli Mayo Chaat Servings: 4 Ingredients:
Vegetable oil 100 ml Idlis cut into four pieces, 4 Chopped onion 1 Chopped tomato 1 Pomegranate seeds 2 tbsp Chopped coriander leaves 4-5 Black salt Chaat masala 1 tsp Mint chutney 1 tbsp Mint mayonnaise 30 gm Tandoori mayonnaise 30 gm Wooden skewers 2 Sev tsp
Method: Heat oil and fry idlis till golden brown in colour. Keep aside to cool. In a bowl, add onions, tomatoes, pomegranate, coriander, black salt, chaat masala and mint chutney. Mix well and keep aside. Take two bowls. Add mint mayonnaise in one and tandoori mayonnaise in another. Add idlis in both bowls and mix well. Insert idlis on skewers. Place skewers on a plate and top it up with above chaat mixture. Garnish it with sev and serve. Your idli mayo chaat is ready.
Tiranga Sandwich Servings: 4 Ingredients: White bread slices 6 Peeled and grated carrot 1 Deseeded and chopped green capsicum 1 Peeled and chopped cucumber 1 Peeled and chopped onion 1 Chopped tomato 1 Tandoori mayonnaise 45 gm Mint mayonnaise 45 gm Mayonnaise 45 gm
Method: In a bowl, add mint mayonnaise, cucumber, capsicum and onion. Spread the mixture on a bread slice and cover with a second slice. Spread 1 tbsp. mayonnaise on top of second slice and cover with a third slice of bread. In another bowl, add tandoori mayonnaise, cucumber, onion, tomato and spread the mixture on top of third bread slice. Place one more slice of bread on top. Cut the sides and sandwich into three fingers. Your Tiranga Sandwich is ready. Serve cold.
Tiranga Veg Pilaf Servings: 2 Ingredients: Boiled rice 300 gm Chopped and boiled broccoli 100 gm Chopped and boiled potato 1 small Chopped and boiled carrot 1 medium Chopped green chilli 1 Chopped onion 1 Mint mayonnaise 2 tbsp Mayonnaise 2 tbsp Tandoori mayonnaise 2 tbsp Chopped mint leaves 3-4
Method: For the green layer, add 100 gm rice, broccoli and mint mayonnaise in a bowl. Mix well and keep aside. For the white layer, add 100 gm rice, potatoes, green chili and veg mayonnaise. Mix well and keep aside. For the orange layer, add the remaining rice, carrot, mint leaves, onion and tandoori mayonnaise in a bowl. Mix well and keep aside. To assemble, place the orange layer, white and green layer, resembling the national flag. Microwave the rice for 30 seconds, garnish it with caramelised onion and serve warm. Your Tiranga Pilaf is ready to serve.
