Guilt-free Spaghetti
Ingredients
- 1 tbsp olive oil
- 1 onion (finely chopped)
- 1 cup soya mince, soaked
- Fresh oregano
- 4-5 chopped tomatoes, made into a paste
- 1/2 tsp turmeric
- powder
- Chilli powder, to taste
- Salt to taste
- Sage leaves (chopped)
- Whole wheat spaghetti
- Parmesan cheese (grated)
METHOD
- In a pan, add olive oil and chopped onions. Let it cook until golden. Now, add minced soya and cook for at least 5-7 minutes.
- Add oregano and fresh tomato paste, cook for five minutes on low flame. Add turmeric powder, chilli powder and salt to taste.
- In a deep pan, add water, little salt and olive oil. Add spaghetti and cook for 9 minutes or until the spaghetti is al-dente ( In cooking, al dente refers to pasta which is cooked to be impeccably firm.)
- Transfer the spaghetti into a capacious bowl and top it with sauce and grated parmesan cheese. Sprinkle chopped sage and serve with garlic bread and some red wine.
