Cooling effect of delitchi'ous treats!

Summer is the perfect season to experiment with litchis as they are readily available in the market.

Litchi Cheesecake in a Jar

Ingredients For the base :

  • Digestive biscuits - 100 gms  
  • Butter, melted - 40gms
  • For the litchi cheese layer :
  • Cream cheese - 500 gms
  • Thicken cream - 300 gms
  • Litchis, drained and reserve syrup - 240 gms
  • Litchi syrup - 100 ml
  • Sugar - 50 gms
  • Powdered gelatine - 3 tsp

Steps :

  • Break the digestive biscuits by sealing them in a ziplock bag and crushing them using a rolling pin. Make sure you get them quite finely.
  • Pour the crushed biscuits in a bowl, and pour the melted butter over them evenly. Combine both butter and biscuits are well combined and press them evenly at the bottom of the jars. Set and chill in the fridge while preparing the litchi cheese layer.
  • In a small pot, heat the litchi syrup till it just comes to a boil. Take it off the heat and add the gelatine. Stir until it dissolves completely. Set aside to cool.
  • Puree the litchis in a blender until there are less visible chunks.
  • Whisk the cream cheese in a mixing bowl with the sugar until smooth, then add the litchi puree. In another bowl, whip the cream to a soft peak and gently fold it into the cream cheese and litchi mixture.
  • Once it’s well combined and smooth, add the gelatine mixture and fill a piping bag with the litchi cheese mixture. Slowly pipe it into the jars. Set to chill in the fridge for at least 4 hours. (I recommend leaving it in the fridge overnight.).To serve, top it with a litchi.

Litchi lemonade

Ingredients:

  • Litchis - 1 cup
  • Lemons - 2
  • Sugar - 2 tbsp
  • A pinch of salt
  • Ice - 1 cup
  • Mint leaves

Method:

  • Peel the litchis and remove the seeds.
  • Blend the litchi pulp into a smooth paste in a blender.
  • Squeeze the juice of one lemon.
  • Add the lemon juice, sugar, salt, and ice to the pulp.
  • Mix well.
  • Serve in a tall glass.
  • Garnish with mint leaves and a lemon wedge.

Two minute Litchi shake

Ingredients

  • Litchis - 8 to 10
  • Milk - 1 cup
  • Vanilla ice-cream - 4 scoops
  • Ice crushed - 1 tbsp
  • Sugar - 1 tbsp
  • Any fruit syrup for garnishing

Method

  • Peel off the skin, de-seed the litchis and keep aside the flesh.
  • Blend the litchi flesh along with milk, two scoops ice cream, sugar and crushed ice in a blender.
  • Blend until smooth and frothy.
  • Add two scoops of ice cream in a tall glass and pour the shake.
  • Garnish with a fruit syrup of your choice.
