Chi-Qui broth
Ingredients
- Pre-boiled shredded chicken 100 gm
- Quinoa 50 gm (soaked for 30 minutes)
- Carrot 1 piece
- Yellow bell pepper- 1 piece
- Celery leaves 2 sticks
- Ghee 1 tbsp
- Water a glass
- Salt to taste
Method
- Heat ghee on medium–high heat, in a large pot and sauté diced vegetables (carrot, bell pepper and celery leaves with the stalk) until they become soft.
- Add in a glass of water and the soaked quinoa.
- Partially cover the pot, and bring it to simmer, then reduce heat to medium and cook until the quinoa starts to soften — for about 12 minutes.
- Add in cooked chicken and stir slowly. Season with salt and pepper.
- Ladle the warm broth into a bowl and enjoy!
