Chick pea, goats cheese and cranberry salad
Ingredients
- 1/2 cup cooked chick peas
- 1 cup each mixed greens (iceberg lettuce, arugula and romaine lettuce)
- 1/2 cup dried cranberries
- 1/2 cup goat cheese
- 1 tbsp pinenuts
Dressing
- 1 tbsp olive oil
- 1/4 cup orange juice
- 1 tsp apple cider vinegar
- 1/2 tsp garlic powder
- 1 tsp mustard
- Cracked black pepper
- Salt
- 1 tsp honey
- Whisk together till blended well.
Method
- Put mixed greens in a bowl and toss with cranberries and chick peas.
- Crumble goats cheese on top.
- Add dressing and toss together.
- Sprinkle with pine nuts. Serve.
