Fava Bean Kuku Ingredients
1 cup of Fava beans, 4 cups of water, 2 tbsp olive oil, 2 eggs, 1 onion (chopped finely), 6 cloves of garlic (chopped finely), 1 cup chopped dill, tbsp baking powder, salt and pepper to taste
Method In a pan heat 2 tbsp of olive oil, sauté chopped onion and garlic till golden brown. In a saucepan add 4 cups of water and boil Fava beans for about five minutes if fresh and eight minutes if frozen. In a bowl, add tbsp baking powder, salt and pepper. Crack into the bowl two eggs and beat well so that there are no lumps. To the bowl, add cooked Fava beans, sauté onions and garlic and 1 cup of chopped dill. Stir the mixture well. Preheat the oven. Grease muffin/ cupcake moulds with olive oil and pour in the mixture. Bake this mixture for 20 minutes at 300 degrees. To serve, de-mould muffin and sprinkle on chopped dill leaves.
