Cook yourself some chocolate
To break away from the monotony of same old chocolates and if you don’t mind dirtying your hand, you can join chef Rakhee Vaswani at her advanced chocolate cooking class this week. At the masterclass titled, The Chocolate Affair, one will learn chocolate pairing and cooking. Chef Rakhee will personally take the participants through the creation of hot liquor chocolates, will teach how to make delicious chocolate filling pairings such as apricot and coconut, hazelnut dredges, caramel sea salt to name a few. She will also demonstrate the Turkish art of hand-made chocolate bites such as date and almond chocolates.
Certified by Le Cordon Bleu at Gordon Ramsay’s Tante Marie in London, Rakhee began her culinary journey at the age of 11, keenly observing her aunts cook delicious food that caught her fancy (and her heart). Rakhee wanted to make world cuisines easily available in the city which led her to set up the first cooking studio in India — Palate Culinary Studio — in early 2010.
Over two decades of experience in the culinary business and her love for teaching have catapulted Palate Culinary Studio from a small mom-and-pop shop to a state of the art international cooking school where she trains upcoming chefs, amateurs, professionals and food enthusiasts alike. The Confederation of Tourism & Hospitality has made Palate Culinary Studio the first centre to provide a UK-certified culinary diploma course in India.
