Mexican street corn: Twisted version
Call it an-all time summer favourite or a salad star, American sweet corn just makes almost anything so delicious! From pizzas to pastas to an exclusive salad of its own, corn should probably be applauded for bringing so much flavour to all these dishes.
You can have it any way you want- grilled or barbecued corn tastes amazing with a hint of lemon, some salt and red chilli powder. You can also do the same with boiled corn. A grilled, spicy version of corn is also a Mexican street favourite. Here’s a twisted recipe with ingredients that are easily available-
Ingredients:
Some olive oil
3 cups of frozen corn
½ red onion, chopped
Some feta cheese (feel free to experiment with cheese types)
Some Cheddar cheese
1 lemon
½ tbsp garlic powder
A pinch of paprika
A pinch of red chilli powder
Salt, as required
¼ cup ranch dressing
Recipe:
Start by taking a pan for sautéing. Add 2-3 tablespoons of olive oil to it and heat it. Add chopped up red onion to it along with your frozen corn. You don’t have to thaw it. Give both the elements a quick stir, and sauté them until the onion turns translucent. You’ll also notice the heavenly aroma filling in your kitchen. Turn the heat off, and keep it aside.
Now, take a large bowl and squeeze juice from a lemon straight into it. You can also use ¼ cup of ranch dressing for your sauce. Add grated cheddar cheese and crumbled feta cheese to it. Mix it all with your hands. Next, add all your spices: garlic powder, red chilli powder, paprika and salt as per your taste. Add sautéed corn to this sauce and toss well. Place this salad in your fridge and let it cool. You can now serve this with a garnish of some red chilli powder!
