‘Khao’ some Khow-suey!

Ingredients

  • For the noodles
  • Noodles (any kind) 200 gm
  • Garlic (cloves) 1-2
  • Water and salt as required.

For the Gravy

  • Chicken (boneless) 500 gm
  • Onion (finely chopped) 4
  • Ginger paste 1 tsp
  • Garlic paste ½ tsp
  • Gram flour ¾ tbsp
  • Turmeric powder 1 tsp
  • Chilli powder 1 tsp
  • Coconut milk 1/2 cup
  • Water 1/2 cup
  • Oil 2 tsp
  • Salt to taste

For Garnish

  • Boiled eggs 3-4 (chopped)
  • Garlic (sliced and fried) ¼ cup
  • Onions (fried) 1/4 cup
  • Coriander (chopped) 2 tbsp
  • Fried noodles ¼ cup
  • Peanuts (crushed) ¼ cup
  • Green chillies (finely chopped) 1 tbsp
  • Soy sauce
  • Lemon (2-3)

Method

  • Boil the water for noodles, along with salt and garlic. Add, noodles and let it boil until well-cooked. Drain and rinse in cold water and keep aside.
  • Heat oil in a pan. Sauté onions till soft. Add ginger, garlic paste, fry until raw smell goes away.
  • Add turmeric and chilli powder along with chicken and sauté until chicken is cooked.
  • Add gram flour and mix well. Pour coconut milk along with water and sprinkle salt. Let it boil until it thickens.
  • Serve by covering the noodles in the gravy and garnish according to your liking. Serve hot.
