Healthy Korean style kimchi fried rice
Ingredients
- 2 cups brown rice
- 100 gm kimchi ( cabbage and lettuce pickle in Korean style)
- Sesame oil 4 tsp
- Sesame seeds 1 tbsp
- Korean pepper paste 1 tbsp
- Inoki mushrooms 1 cup
- Spring onions 3
- Fish sauce 1 tbsp
- Nori sheets (seaweed) 2
- Garlic cloves 4
- Eggs 2
METHOD
- Cook the brown rice.
- On a pan, heat sesame oil and add finely chopped spring onions, garlic, and sauté, chop the kimchi and sauté together, add inoki mushroom, add one spoon of Korean pepper paste, mix and sauté well.
- Once half-cooked, add fish sauce and salt according to taste.
- Finally put the rice on to the pan and mix well.
- Do a beautiful topping with a sunny side egg, add toasted sesame seeds and nori sheets. Enjoy.
