A goal to get good food

Soccer fever is here and hotels in Kerala are gearing up to usher in the football season. Hotel Presidency in Kochi will be serving some mouth-watering dishes that will reflect the football spirit. Executive Chef John T. John and team are ready with signature dishes of the participating countries. Here he shares three such recipes. The feast will happen between 4 pm to 11 pm everyday.

PRAWN TEMPURA

Ingredients:
Prawns with Tail - 6 numbers (except for tail)
Flour- 50 gm
Corn flour- 120 gm
Thai seasoning powder- 2 pinch
Parsley- 3 strips
Salt- to taste
Iced water- 1 cup
Oil-for frying

Method
Remove the shell, split prawns and take out the vein.
Press the prawns and open them with your hand to make a butterfly shape.
For the batter, combine flours and seasoning. Gradually mix in the ice water until you have a soft batter.
Dip the prawns into the flour, shake gently, then dip into the batter.
Deep fry until golden colour.
Remove and serve with sweet sauce.

BRITISH FISH N CHIPS

Ingredients
Fish Fillet (Seer) - 2 numbers
Plain flour - 1 cup
Lemon juice - 1 tbsp
Salt - to taste
White Pepper Powder - 1 tsp
Bread crumbs - For crumbed
Mustard Paste - 1 tsp
Egg- 1 no
Oil - for frying

Directions
Peel the potatoes and cut into wedges.
Fry chips for about 3 minutes until golden coloured. Drain and set to one side.
Cut the fish and wash properly.
Mix all ingredients with flour and make into smooth batter.
Dip in to the batter to soak each piece of fish.
Heat the oil and deep fry until golden in colour.
Serve on plates very hot with fried potato wedges and garlic mayonnaise.

BBQ CHICKEN

Olive oil - 3 tsp
Barbecue sauce - 3 tbsp
Yogurt - 1 tbsp
Cilantro leaves - For garnish
Fresh lime juice - 1 tbsp
Chicken Breast - 2 no (cut in to 6 nos)
Paprika Powder or K. chilli Powder - 2 tsp
Garlic minced - 3 gloves
Pepper powder - 1 tsp
W. Sauce - 1 tsp
Mustard Sauce - 1tsp
Salt - to taste

Method
Combine all ingredients in a small bowl and mix with chicken.
Let chicken marinate for at least an hour.
Preheat oven to 190 degrees.
Bake for 1 minute.
Brush a layer of BBQ sauce on the chicken.
Return to the oven and cook until well done.
Serve hot with Buttered rice
