Plum's the word!
Neetha Bhoopalam, a city-based baker, lets us in on her signature pie recipe.
Preparing the Crust
- Maida – 1 cup
- Corn flour – 1 1/4 tbsp
- Baking powder -1/4 tsp
- Grain sugar – 1 tbsp
- Salt – 1/8th tsp or a pinch
- Butter – ¼ cup
Ingredients
- Big Plums - 2
- Lemon Juice – ½ tsp
- Sugar – ¼ cup or lesser
- liquid glucose – ½ tbsp optional (gives chewy texture
- Maida – 1 tbsp
- Ground Cinnamon – ¼ tsp
- Salt - 1 pinch
- Butter - 1 tbsp
Procedure
- Mix the dry ingredients. Rub in butter to resemble bread crumbs. Add enough milk to form stiff dough.
- Refrigirate dough for 25 mins and take it out. Keep aside quarter of the dough. Roll the remaining to fit base of 7 inch pie pan. Prick with fork and put in the pie filling into it.
- Roll the remaining dough into thin sheet and cut into strips. Arrange it over the filling. Give it egg wash. Bake it in preheated oven at 180 degrees for 45 minutes.
