Say Aloo to the dum!
Fashion designer Neetu Gupta shares her go-to Calcutta Aloodum recipe.
Calcutta Aloodum
Ingredients
- ½ kg small potatoes
- 3 tbsp chaat masala
- 1 cup tea water
- Imli (tamarind) water
- Black salt
- A pinch of sugar
- Salt to taste
- Ginger
- Garlic
- Green chilli
- 1 onion
- 1 tomato
Method:
- Put the potatoes in water. To this, add chaat masala, tea water, Imli water, black salt, salt (to taste) and sugar. Leave this to stay for two hours.
- In a pan, add garlic, ginger, green chillies, onion and tomato. Fry it well, till it’s caramelised.
- Then, add potato to this mixture and cook for 15 minutes. Serve with hot rice or roti.
