Say Aloo to the dum!

Fashion designer Neetu Gupta shares her go-to Calcutta Aloodum recipe.

Calcutta Aloodum

Ingredients

  • ½ kg small potatoes
  • 3 tbsp chaat masala
  • 1 cup tea water
  • Imli (tamarind) water
  • Black salt
  • A pinch of sugar
  • Salt to taste
  • Ginger
  • Garlic
  • Green chilli
  • 1 onion
  • 1 tomato

Method:

  • Put the potatoes in water. To this, add chaat masala, tea water, Imli water, black salt, salt (to taste) and sugar. Leave this to stay for two hours.
  • In a pan, add garlic, ginger, green chillies, onion and tomato. Fry it well, till it’s caramelised.
  • Then, add potato to this mixture and cook for 15 minutes. Serve with hot rice or roti.
