Mango Coconut Delite
Ingredients
- Four ripe mangoes (Alphonso variety preferred)
- Coconut (half cup, grated)
- Coconut milk one cup
- 150 gm jaggery
Method
- Peel off the mango skin and extract pulp. Keep aside, and store the pulp in a bowl.
- Whisk the pulp well until a fine, creamy texture is formed.
- Melt two small chunks of jaggery in a separate container and allow it to cool.
- Mix jaggery with coconut milk and stir.
- Add the mixture to the thick mango. Stir gently.
- If you wish to keep it puffy and creamy, skip blending it. Or, if you like it as a shake, blend well to create a fine smoothie.
- Add the mixture to the thick mango pulp and gently stir.
- In the end, add grated coconut and crushed dry fruits to the mixture and leave it in the refrigerator.
- Voila! Your creamy mango delight is ready!
