Mango Coconut Delite

Ingredients

  • Four ripe mangoes (Alphonso variety preferred)
  • Coconut (half cup, grated)
  • Coconut milk one cup
  • 150 gm jaggery

Method

  • Peel off the mango skin and extract pulp. Keep aside, and store the pulp in a bowl.
  • Whisk the pulp well until a fine, creamy texture is formed.
  • Melt two small chunks of jaggery in a separate container and allow it to cool.
  • Mix jaggery with coconut milk and stir.
  • Add the mixture to the thick mango. Stir gently.
  • If you wish to keep it puffy and creamy, skip blending it. Or, if you like it as a shake, blend well to create a fine smoothie.
  • Add the mixture to the thick mango pulp and gently stir.
  • In the end, add grated coconut and crushed dry fruits to the mixture and leave it in the refrigerator.
  • Voila! Your creamy mango delight is ready!
