Shrimp it in slaw

Prawns cocktail coleslaw

Ingredients

  • Prawns (200 grams)
  • Mexican sweet chillies
  • Salt to taste
  • Chopped pineapple (half)
  • Mint leaves
  • Five cherry tomatoes
  • Chopped garlic

For dressing:

  • 1 tsp honey/ maple syrup
  • 2 tsp fish sauce
  • 3 tsp red wine vinegar

Method

  • Begin by sauteing freshly cleaned prawns in olive oil for not more than five minutes. Make sure you do not overdo this. Keep aside. Now, in another bowl, add fresh pineapple chunks and cherry tomatoes. Mix well. Add a smattering of Mexican sweet chillies. Now, throw in some chopped garlic, and mint leaves as per your taste. Gently mix. Now, finish it up by adding one tsp honey/maple syrup and two tsp fish sauce. For enhanced flavour, add three tsp red wine vinegar and mix well. Serve with whole wheat bread. But the coleslaw is filling by itself. So, go ahead and relish!
