Lil' black book: A bacon of light!
Bacon spinach and parmesan pasta
Ingredients
- Half or one packet of penne pasta
- 6 slices bacon
- Garlic butter
- One diced onion
- 2 minced garlic cloves
- 1 packet sliced button mushrooms
- Garlic and salt to taste
- A few leaves of baby spinach and
- 1 tsp flour
- Half fresh grated parmesan cheese
Method
Cook penne pasta and set aside. In another pan, cook bacon and set it aside to cool and then crumble loosely. Sauté garlic and onion in garlic butter over medium flame until well browned, add mushrooms, season with garlic salt, and cook until reduced, 10 or so minutes. Add spinach and cook stirring frequently. Mix the pasta, bacon and the sautéed vegetables in a large serving bowl. Add flour and make a paste and keep stirring well until no lumps remain. Slowly add the rest, stirring constantly. Boil for a minute until slightly thickened, stirring constantly. Add parmesan to the sauce and stir until melted. Now, pour sauce over pasta, bacon and veggie combo, and mix well. Serve hot with a portion of fresh arugula salad.
